In honor of cinco de mayo... I made chicken tortilla soup and strawberry margaritas.

chicken tortilla soup
1 onion, chopped
4 cloves garlic, minced
1 tablespoon olive oil
2 ½ teaspoons chili powder
1 teaspoon dried oregano
28 oz crushed tomatoes
28 oz chicken broth
15 oz black beans, rinsed and drained
¼ cup chopped fresh cilantro
2 boneless chicken breast halves, cooked and shredded
crushed tortilla chips
sliced avocado
shredded cheese
chopped green onions
squeeze of lime juice
saute onion and garlic in oil until soft. Mix in chili powder, oregano, tomatoes and broth.
bring to a boil, and simmer for 10 minutes.
stir in beans, cilantro and chicken. Simmer for 45 minutes.
top each bowl of soup with crushed tortilla chips, avocado slices, cheese and chopped green onion.
strawberry margarita
6 fluid oz tequila
2 fluid oz triple sec
8 oz frozen strawberries
½ can frozen lemonade concentrate
splash of OJ
squeeze of lime juice
cup of ice
